Romesco is a sauce originally from Spain and has a consistency like hummus. You can use it as a dip or as a component of a dish or even spread on toast. Check out our recipe for roasted capsicums.
- 500 grams roasted red capsicum
- 100 grams almonds
- 1 chopped onion
- 100 grams stale bread
- 150 grams chopped tomato
- 1/8 cup olive oil
- 1/8 cup rice bran oil or other neutral
- 2 Tablespoons sherry vinegar
- 1 Tablespoon smoked paprika
- 1/8 Teaspoon cayenne pepper
- 6 garlic cloves
- Salt and pepper
Preheat oven to 200℃.In a fry pan sweat onions without colouring until cooked through.In an ovenproof dish mix the onions, tomatoes, almonds and five of the garlic cloves. Season with salt and pepper and bake for ten minutes. Set aside to cool.Now puree everything in a food processor, blender or with a stick blender.Season to taste with salt and pepper.
