A great way to add a new flavour to capsicums and also get them ready to preserve.
- 2 Capsicums
- 1 teaspoon rice bran oil or other neutral oil
Pre-heat oven grill to a medium high heat.Completely coat capsicums in oil.Place in a low sided oven safe dish (a cast iron pan is perfect for this).Place in the oven on the highest rack possible.Allow to grill and colour, rotate and repeat until all sides are coloured.Remove from the oven and place in a bowl. Wrap the bowl with cling film making sure there's a tight seal.Leave to sit until cool.Now you can simply peel the skin off with your hands and scrape out the seeds and pith with a spoon.
