Lemon & Thyme Dressing

This is a quick and easy dressing that goes with a wide variety of veggies and meat. If you like your dressings with more zing, add more lemon juice or mustard. Add more honey if you like it a bit more on the sweet side.

Don't throw away the leftover lemon "shells" after zesting and juicing, you can use these to add flavour to roasted dishes like Shaun's Crusted Chicken.

Lemon & Thyme Dressing
A bright dressing that works on nearly everything.
  • Zest of one lemon (about ½ tsp)
  • 1/4 cup lemon juice (2 medium lemons)
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 1 teaspoon chopped fresh thyme
  • 1/2 cup rice bran oil
  • salt and pepper
Blend everything together until smooth and creamy.Season with salt and pepper to taste.Store in the fridge until needed.
